What is Azorubin?

Lebensmittelzusatzstoff E122 – Azorubin ist ein synthetischer azoischer Farbstoff, der eine rote Farbe verleiht. Es kann auch unter dem Namen Carmoisine oder Cardinal 3B gefunden werden. Als azoischer Farbstoff kann Azorubin bei Personen, die empfindlich auf Salicylate reagieren, zu einer Unverträglichkeit führen. Es ist ein Histaminfreisetzer und kann Asthmasymptome verschlimmern. In Kombination mit Benzoaten (E 210-215) kann es bei Kindern zu Hyperaktivität (ADHS-Syndrom) führen.
