What is Thaumatin?

A food additive used as a flavor enhancer and sweetener. It is a natural product obtained from the seed shells of the katemfe fruit of the shrub Thaumatococcus daniellii, native to West Africa. As a sweetener, thaumatin is 2000 times sweeter than sugar, but its sweetness has a different profile: it is not immediately perceived and has a very long-lasting effect. It is highly stable at high temperatures and any acidity level, and it has no calories.
