Homemade Lunchables: Real Food, No Preservatives

Packaged lunch kits are convenient but typically contain sodium nitrate in the deli meat, TBHQ in the crackers, and artificial flavors throughout. Building your own takes about 5 minutes and uses ingredients you can actually read on the label.

Ingredients

  • For the protein (choose one):
  • 4–6 slices nitrate-free deli turkey or ham
  • 4–6 slices salami or pepperoni (look for uncured varieties)
  • 2 hard-boiled eggs, sliced
  • For the cheese:
  • 4–6 slices cheddar, gouda, or mozzarella
  • For the crackers:
  • 12–16 whole grain crackers (look for short ingredient lists)
  • Optional extras:
  • 4–6 cherry tomatoes
  • 2 tablespoons hummus or cream cheese
  • A small handful of grapes or apple slices

Steps

  1. Choose a divided container or a bento box with separate compartments.

  2. Fold or roll the deli meat slices and place in one compartment.

  3. Cut cheese into squares or triangles roughly the same size as the crackers.

  4. Arrange crackers in another compartment.

  5. Add any extras — cherry tomatoes, fruit, or a small dip container.

  6. Seal and refrigerate. Best consumed within 24 hours for optimal freshness.

  7. Pack an ice pack if the lunchbox will be unrefrigerated for more than 2 hours.

Why Make Your Own Lunchables

Packaged lunch kits often contain sodium nitrate (E251) in processed meats, TBHQ (E319) in crackers, and multiple artificial flavors. The sodium content is typically very high — often over 800mg per kit. A homemade version lets you choose the quality of each component and control sodium levels.

Tips and Variations

For a pizza-style kit, use mini pepperoni, mozzarella cubes, and a small container of marinara sauce. For a vegetarian version, use hummus, cucumber slices, and cheese. Whole grain crackers with 5 or fewer ingredients are the cleanest option. Look for deli meat labeled 'uncured' or 'no nitrates added' — though note that some uncured meats use celery powder, which contains naturally occurring nitrates.

How This Compares to Packaged Lunch Kits

A typical packaged lunch kit lists sodium nitrate in the meat, TBHQ in the crackers, and artificial flavors in the cheese sauce. Sodium is often 800–1000mg per kit. A homemade version with nitrate-free meat, real cheese, and whole grain crackers can have half the sodium and no preservatives. The trade-off is slightly more prep time and a shorter shelf life.
